Spaghetti With Spicy Tomato and Zucchini Sauce

My husband loves to eat meat. He has this somewhat annoying habit of asking, "what's for dinner" before I have even set the food on the table. On the rare occasion that we are not having meat, he lets out a kind of sigh, changes his body language, and braces for whatever healthy entree that is about to endure.

Spaghetti With Spicy Tomato and Zucchini Sauce
Ingredients:

2 T. olive oil
3 cloves garlic, crushed
1/4 t. hot pepper flakes
a few sprigs of thyme
1 medium zucchini, quartered and sliced
1 container of grape tomatoes, halved
1/2 t. salt, or to taste
black pepper
fresh basil, torn
parmesan cheese
1 package spaghetti (13.5 oz)

Directions:

In a cold skillet place olive oil, crushed garlic, hot pepper flakes, and thyme.  Turn heat to medium heat and warm ingredients until fragrant. Add the sliced zucchini and saute for 8 minutes.  Add the tomatoes, salt and pepper, and continue cooking for an additional 5 or so minutes.  The tomatoes should begin to break down and zucchini will continue to cook through.  Meanwhile, bring a pot of salted water to a boil and cook pasta according to package instructions.  Drain pasta and add to the pan with the sauce, tossing to combine.  Serve with freshly torn basil and parmesan cheese.
